Planning a speaker series can be an interesting way to fundraise for an organization.  You can recruit interesting speakers to volunteer to speak at a single event or to speak at a weekly luncheon.  In a small, community-focused town, this should not be too difficult.  Try searching for local artists, authors, government officials and businesspeople.

Once you have lined up the speakers, start selling tickets.  Spread the word!  Be sure to let people know that the speaker series is for a good cause.  This can become a recurring way to raise money for your organization.
